Ingredients
  

  • 3 pounds chicken wings - use ""party-style"" or split them into flats and drumettes removing the wingtips
  • 2 tablespoons olive oil to coat the wings evenly
  • 2 tablespoons paprika for rich color and mild smokiness
  • 2 teaspoons garlic powder to build bold flavor
  • 1 teaspoon onion powder for savory balance
  • ¾ teaspoon salt or more to taste
  • ½ teaspoon black pepper to add a little kick
  • Optional for serving: Buffalo sauce, ranch dressing, blue cheese dressing, or your favorite dipping sauce

Instructions
 

  • Preheat the oven to 400°F. Line a rimmed baking sheet with foil and place a wire rack on top. Lightly coat the wire rack with cooking spray.
  • In a small bowl, mix together the paprika, garlic powder, onion powder, salt, and pepper. Set aside.
  • Pat the chicken wings very dry with paper towels - this step is key for crispiness.
  • Transfer the wings to a large bowl, drizzle with olive oil, and toss to coat evenly.
  • Sprinkle the seasoning mixture over the wings gradually, tossing between each addition to ensure every piece is well coated.
  • Arrange the wings in a single layer on the prepared wire rack. Bake for 20 minutes, then flip the wings and continue baking for another 20–30 minutes, until they’re golden and crispy. For best texture, cook until they reach an internal temperature of 190–200°F.
  • Serve the wings hot with your favorite dipping sauces.
