Ingredients
  

  • 2 cups broccoli florets about ½ pound
  • 5 large eggs
  • ¾ cup milk whole milk recommended
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 1'9-inch pie crust (whole wheat or regular, see note)

Instructions
 

  • Preheat the oven to 375°F.
  • If not using a prepared pie crust, roll out the pie dough and fit it into a pie dish. Trim the edges and flute as desired. Chill until ready to use.
  • Place 1-2 cups of water in a small pot and bring to a boil. Add the broccoli, cover, and cook until crisp-tender, about 4 minutes. Transfer to a colander, rinse with cool water, and drain well. Chop into small pieces.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper. Stir in the chopped broccoli and cheddar cheese, then pour the mixture into the prepared pie shell.
  • Bake for 35-50 minutes, until the eggs are set in the center. Check at 25 minutes, and if the crust is browning too quickly, tent with foil.
  • Let the quiche stand for 5 minutes before serving.

Notes

Pie Crust: A deep-dish pie crust is recommended for this recipe. If using a regular pie crust, reduce the eggs to 4 to prevent overflow.
To Use Frozen Broccoli: Thaw completely and squeeze out any excess water before adding it to the egg mixture.
Milk: Whole milk is recommended for richness, flavor, and to help the quiche set properly. For a creamier custard, substitute heavy cream or half and half for the milk.
Bake Time: Baking time varies based on the pie pan. A store-bought aluminum foil pie pan, glass dish, or ceramic dish may result in slightly different bake times. The quiche is done when the eggs are fully set and the center reaches 165°F (measured with an instant-read thermometer).
To Reheat: Leftover quiche slices reheat well in the microwave. For oven reheating, bake at 350°F, covering with foil as needed to prevent excessive browning.
