- 4 boneless ribeye or New York strip steaks 1 to 1 ½ inches thick, about 10–12 ounces each
- 2 tablespoons olive oil to coat the steaks before grilling
- Kosher salt and black pepper added to taste for seasoning
- Garlic butter or plain butter optional, for a rich finish when serving
Let the steaks sit at room temperature for 20–30 minutes before cooking.
Trim any excess fat from the edges to help prevent flare-ups on the grill. Rub olive oil over both sides of the steaks, then generously season with salt and pepper.
Preheat your grill to high heat (around 500°F). Sear the steaks for 2 minutes on each side, then lower the heat to medium and continue grilling with the lid closed until the steaks reach your preferred doneness, about 7–12 minutes depending on thickness and grill temperature.
Remove steaks from the grill when they’re 3–5°F below your target temperature, as they’ll continue to cook while resting.
135°F for medium-rare
145°F for medium
150°F for medium-well
160°F for well done
Transfer steaks to a clean plate, cover loosely with foil, and let rest for 5–10 minutes before slicing or serving. Serve with garlic butter or plain butter and a sprinkle of fresh herbs, if desired.
