Ingredients
  

Fajita Seasoning

  • 1 tablespoon chili powder for bold smoky flavor
  • 1 teaspoon paprika to add color and a mild sweetness
  • 1 teaspoon garlic powder for rich savory depth
  • 1 teaspoon onion powder to round out the seasoning blend
  • 1 teaspoon ground cumin for warm earthy notes
  • ½ teaspoon dried oregano for a hint of herbal flavor
  • 1 teaspoon salt or more to taste
  • 1 teaspoon granulated sugar optional - balances the spices
  • ¼ teaspoon cayenne pepper optional if you want extra heat

Sheet Pan Fajitas

  • pounds boneless skinless chicken breasts, sliced against the grain into ½-inch thick strips
  • 3 bell peppers - red yellow, and orange for color and sweetness, thinly sliced
  • 1 large yellow onion thinly sliced for rich, savory flavor
  • 2 tablespoons olive oil to coat and cook everything evenly
  • juice of half a lime to add brightness and tang
  • ¼ cup chopped fresh cilantro for a fresh vibrant finish

For Serving

  • 12 small flour tortillas warmed and ready for filling
  • optional toppings: guacamole or sliced avocado sour cream, pico de gallo or salsa - customize to your taste

Instructions
 

  • Preheat the oven to 425°F.
  • In a small bowl, mix the fajita seasonings until well combined.
  • Line a rimmed baking sheet with parchment paper. Add the sliced chicken, bell peppers, and onions to the sheet.
  • Drizzle with olive oil and sprinkle the seasoning mixture over the top. Toss to coat everything evenly, then spread the ingredients out in a single layer.
  • Bake for 18–20 minutes, stirring halfway through. After 10 minutes, toss the chicken and veggies, spread them out again, and return to the oven to finish cooking until the chicken is fully cooked.
  • Once done, squeeze fresh lime juice over the top and sprinkle with chopped cilantro.
  • Serve hot in warmed tortillas with your favorite toppings.
