Ingredients
  

  • 5 ounce canned tuna in water drained well
  • 2 tablespoons plain Greek yogurt or mayonnaise
  • 1 tablespoon sweet pickle relish
  • 1-2 tablespoons finely chopped red onion
  • salt and pepper to taste
  • 4 slices bread such as ½-inch thick sliced ciabatta sourdough or whole wheat
  • 1 tablespoon salted butter softened to room temperature
  • 2 ounces sliced sharp cheddar cheese
  • 1 ripe tomato sliced optional

Instructions
 

  • In a medium bowl, combine the drained tuna, plain Greek yogurt (or mayonnaise), sweet relish, finely chopped red onion, a pinch of salt and a little ground black pepper. Stir everything together with a fork until the mixture is creamy and well blended.
  • Spread the softened butter on one side of each slice of bread, making sure to cover the entire surface for even toasting.
  • Assemble the sandwiches by layering a generous spoonful of the tuna mixture on one slice of bread (non-buttered side), add tomato slices if using, and top with a slice of cheese. Place the second slice of bread on top, buttered side facing out.
  • Heat a skillet over medium-low heat. Place the sandwiches in the skillet and cook for 3 to 5 minutes, until the bottom is golden and crisp. Flip carefully and cook the second side for another 3 minutes, or until both sides are evenly browned and the cheese is melted. Serve warm.
