- 1 tablespoon olive oil
- ¾ cup finely chopped red onion
- 1 medium carrot finely diced
- ½ red bell pepper finely diced
- 2 cloves garlic minced
- 1 pound ground turkey
- Salt and pepper to taste
- 1 cup tomato sauce 8-ounce can
- ½ cup BBQ sauce
- ½ cup water
- 2 tablespoons chopped fresh cilantro
For serving:
- 5 whole wheat burger buns toasted
- shredded gouda or mozzarella cheese optional for serving
Heat olive oil in a large skillet over medium heat. Add the onion, carrot, and bell pepper, and cook, stirring occasionally, until the vegetables soften, about 4-5 minutes. Add the garlic and cook, stirring, for 30 seconds.
Add the ground turkey to the pan and season with salt and pepper. Cook the turkey, breaking it up into pieces, until it starts to brown, about 6 minutes.
Add the tomato sauce, BBQ sauce, and water. Stir, reduce the heat to a low simmer, and cook for 10 minutes, until the sauce thickens, stirring occasionally. Remove from heat and stir in the cilantro.
Serve the sloppy joes on toasted burger buns, topped with shredded cheese if desired.
